Add Asparagus to May

Asparagus season has hit and boy does it taste good! You’ll be glad to hear it’s in season in the UK from around May-July. Help to support British produce and make the most of the asparagus season this summer.

If you are stuck on ways to serve it, fear not, simply sauté in a knob of butter with a squeeze of fresh lemon, salt and pepper for the perfect side dish. Alternatively steam them then dip them into your boiled eggs or roast them in a drizzle of olive oil.

This elegant green veggie is highly versatile, as well as packing a nutrient punch. Asparagus is rich in vitamin A and C, calcium, potassium and iron. They are typically known for their green appearance but can also be found in white and purple variations.

Top tip: forget chopping the ends simply break the stalk and it’ll remove the woody part of the asparagus.

Minty Asparagus & Feta (v)

This is the perfect side dish to freshly cooked salmon and Jersey royals, how can you say no to that this May.

Serves 2


1 Bunch of Asparagus, woody stalks removed

¼ Lemon, juiced

Salt & Pepper

1 Handful of Mint, roughly chopped

50g Feta, crumbled


1. Steam the asparagus for 6-8 minutes or until tender.

2. Drain and put into a large bowl, add the lemon juice, salt and pepper.

3. Add the roughly chopped mint and crumble over the feta.
